Description
This ancient Sicilian variety is grown in Chalk Hill Viticulture’s Lanark Vineyard. Fun fact – Grillo also serves as the base grape variety of Marsala. Two days of skin contact, wild fermented in old French oak hogsheads. Full malolactic fermentation with periodic lees stirring. Rests in seasoned oak 11 months before bottling.
“This is a wine that never dies wondering. It’s (pale) yellow in colour and flamboyant with flavour, though (importantly) it ultimately finishes dry and controlled. Hay, bacon, steel, honeysuckle, saltbush, grapefruit and nectarine – you name it, almost, and there are echoes of it here. It’s textural too; it’s a white wine that rumbles through the mouth.
