Intense and pure, even for an entry wine.  This is an old vine cuvée with vine age averaging 45 years, the oldest plantings dating back to 1905.  Fine lees are stirred monthly for one year before bottling without fining or filtration.  Fresh and powerful, pretty classic Chablis, overall impressions of brine and oyster shells with lemon, peach, pear and green fruits.  Whilst tense it has some richness and power, definitely a step up from many AC Chablis.

Intense, traditional, mineral drenched Chablis from a no compromise operation

One of oldest properties in Chablis and with family winemaking ancestry stretching back some 400 years, this is a domaine with important historical presence. The 26 hectare estate has significant Premier Cru plantings, and the winemaking ethos gives some idea to these wines' natural intensity. No oak is used in the élevage, with weight and texture brought about through extended skin contact, long and slow wild ferments, no artificial rushing of malolactic fermentation which can take months, and a type of bâttonage which does not expose the wine to air, using natural carbon dioxide from the ferment to preserve the wine. The wines are bottled unfined and unfiltered, and as perhaps the ultimate statement of no compromise, atypically for Chablis, are released with significant bottle age. A phenomenal, first rate producer of the region.
